it's great! As a experienced degoogler (doing it from 1~2 years, initially I was not aware I'm degoogling but I was degoogling). I'll recommend you to keep gmail/email in last or in level/step 3~4 in degoogling journey.
Because gmail/email is linked with many accounts and you don't even know how many so you'll simply loss access of all accounts if you delete gmail. (So don't delete just avoid using)
Which email service is best to use long-term. I’ve heard Proton Mail is good, but I’ve also seen posts claiming Proton sometimes blocks users accounts without explanation. I’m concerned about that.
Emails like proton, tuta are know for privacy friendlyness. I'm personally using zoho mail from more then 1~2 years and I've not faced any issue with it. I's reliable email for me. (Go with any top email providers which have good record of data handling, but just don't create email in there account, like if you are going with proton then you can create email like name@ proton[.]me and as you raised concern they can block your access anytime. So you'll loss access.
What you can do is: go with proton, tuta, zohomail or any provider you trust but instead of making email on there domain, by your own domain (which will cost 700~1500inr per year) and make email from your own domain so even if they block your account you can simply switch to another provider without lossing control on your mail. like name@ mydomain[.]com (This paragraph also answer your question 4)
How many email addresses should I ideally use for better privacy and security. Currently, I use a single Gmail ID for everything (banking, UPI, college, crypto, social media, and various websites/apps). Should I separate these into multiple IDs? How do others usually handle this?
It's your personal decision, but I'm sharing my experience.
I've 2~5 gmails (I've made long time ago so I used them and use for there purposes, like 1 personal, 2~3 business, 1~2 throwaway etc, I'm trying to reduce it more)
I've 2~3 (I'm not sharing exact numbers) domain based emails for business, personal etc
I generally use 1 gmail as my primary gmail for other stuffs which is not concern (like sign in with random website, etc)
I use my personal domain based email for critical things like professionality, banking etc
If you use your domained email then services you will sign up can easily target you by domain so look simple common simple man use gmail to keep your privacy.
I use email regularly, I want a service that is stable and for long-term use.
buy domain, go with any great, cheaper, privacy friendly emails (don't go with big corp like google, outlook etc) I use zohomail because they provide free email on my custom domain.
Also there is way to self host email (You can explore it if you are tech person, but it's not recommended, only go with if you know what you're doing, not too hard, but not recommedned for begginers)

Buying domain and using it for email will cost you addtional 700~1500 inr yearly. But lot of benefits and worth investing in it. (If you need to take less food then do it but prefer custom domain) You techically become indipendant and no-vendor lock in. Like if you today want to use google-workspsace gmail you can. Next day if you thought you want to use proton you can, next day you want tuta then you can. And if you want to automate email you can and there are lot of benefits of domain. Domain is your own address in digital world.
Is there any ways to find how many platforms I have logged in with my gmail. because i use this gmail for very long period of time.
Signed in with googgle: then you can see the list of app/websites, but signed with gmail/email then you can't
Alternative for chrome, drive, sheets, slides and authenticator.
Chrone=Brave, firefox (with uBO)
authenticator, TOTP, Password store=Ente Auth (FOSS), Bitwarden
drive=Local backup (I've not tried others so no comment)
sheets, slides=(I use libre locally)
